Mackerel Woku Recipe (Indonesian Spicy Fish Soup)

Woku is known as a typical Manado (one of Indonesian city) dish which is synonymous with a bright red sauce, spicy and rich in spices. Usually processed with fish or chicken.

This time, the woku menu is served using mackerel scad fish, which is not too familiar, because snapper, grouper, and spanish mackerel are often used as woku.

Known for its distinctive spices with a blend of aromatic leaves such as basil leaves, lime leaves, and pandan leaves, woku feels more indulgent to the tongue.

Speaking of leaves, Woku is synonymous with Woka leaves which are often used to wrap food.  So, woku with woka leaves is called "woku daun", while what is cooked in a pan is called "woku belanga".

Woku ingredients

The main ingredient:

  •  5 mackerel scad fish (medium)
  •  5 sprigs of lemon basil
  •  5 lime leaves (thinly sliced)
  •  2 lemongrass (crushed)
  •  1 cup water (200 ml)
  •  1 tomato (optional)
  •  4-5 cayenne pepper (chopped small)
  •  2-3 tbsp cooking oil

Seasoning ingredients:

  •  2-3 cm of ginger
  •  2-3 cm of turmeric
  •  6 shallots
  •  4 cloves garlic
  •  1-3 large red chilies
  •  Salt to taste

How to make woku

  1. Grounding seasoning ingredients use a blender or mortar and pestle.
  2. Sauté ground seasoning with lime leaves, cayenne pepper, and lemongrass, stir all the ingredients until wilted and fragrant.
  3. Pour water into the pan then add the fish.
  4. Simmer until the fish is cooked.  Add basil and tomato chunks.
  5. Stir only briefly, making sure to stir slowly so the fish doesn't fall apart.  Taste correction then remove from stove. Serve and enjoy.
